Canadian Prawns with an Eastern twist

Prawns with a sweet chilli noodle salad
  • *1 pack of buckwheat noodles
  • *1 pack of Perfect Catch Canadian Prawns
  • *4 spring onions, sliced
  • *4 handfuls of fresh bean sprouts
  • *1 red pepper, thinly sliced
  • *4 leaves from a Savoy cabbage, washed & shredded
  • *2 tbsp vegetable oil
  • *1 red chilli, sliced
  • *3 tbsp rice wine vinegar
  • *100g/4 oz caster sugar
  • *1 tbsp fish sauce (Nam Pla)
  • *1 garlic clove, finely chopped
  • *2.5cm/1 inch of ginger, finely chopped
  • *100ml/4fl oz water
  • 1Bring a large pan of water to boil and add noodles. Cook for 7–9 minutes, or as directed on the pack. Once cooked, drain, rinse under cold water and set aside.
  • 2To make Sweet Chilli Dressing, put all ingredients into a small pan. Bring to the boil and simmer for 6–9 minutes, until desired consistency has been reached.
  • 3In a hot wok, add oil, followed by pepper, onion and cabbage, and cook for 2 minutes over a high heat. Add prawns and noodles and cook until hot.
  • 4To serve, place prawns and noodles on a plate and top with Sweet Chilli Dressing.
