Fish Salsa

Mexican Style Fishcakes with fresh herb & tomato salsa
  • *1 packet of For the Love of Fish Mexican Style Salmon Fish Cakes
  • *225g/8oz cherry tomatoes
  • *60g/2oz fresh coriander
  • *1 red onion, diced
  • *1 half of a red chilli, finely diced
  • *1 yellow pepper, finely diced
  • *1 lime, juice and zest
  • *100ml/4fl oz olive oil
  • *1 garlic clove, finely chopped
  • *cracked black pepper and sea salt
  • 1Finely chop salsa ingredients and mix with lime juice, olive oil and seasoning.
  • 2Leave to marinate while you grill the fishcakes according to directions on the packet.
  • 3Serve with a mixed leaf salad.
Cooling balance
Add a peeled & chopped avocado and half a cucumber cubed to the mixed leaf salad to give a cooling balance to the salsa.
